Who doesn't love a good blueberry cake? It's soft and moist, with the refreshing taste of juicy blueberries.
Ingredients:
- Preheat your oven to 204 °C
- Cream the sugar and butter until smooth
- Mix in the buttermilk and eggs until combined
- Combine all your dry ingredients in a separate bowl
- Add the wet ingredients to the dry ingredients and carefully fold it in
- Add in your blueberries and mix until they are incorporated
- Bake for about 19 - 20 mins
- Enjoy
- Coat the fresh blueberries with just a little bit of flour to ensure that the berries don't sink to the bottom of the cake.
- This recipe makes an 8" round cake.
- If you are using a deeper cake tin, bake the cake for a longer time.
- Use 3/4 cup of white sugar if you like the cake to be sweet.
