We recently had the honour of making Elim Chew's 50th birthday cake! This cake was one of the highlights of our week! The great white shark, sea life elements and sign were all made from fondant. The client requested for the shark to dive from the water and we love how this idea turned out. Read more to see a full shot of the cake!</div>

The buttercream waves were made using an offset spatula and 3 different shades of blue & white buttercream. For the waves, make sure to keep the white buttercream mostly at the top (i.e. sea foam) and to spread the buttercream in a downward motion. </div>

We baked a single 8" square chocolate cake and filled the cake with our chocolate & Oreo frosting. To make the frosting, we crushed up some yummy Oreos (we removed the filling because we didn't want it to be too sweet - but you can leave it in if you like!) and mixed it in with the buttercream (recipe <a href="http://twinniefoods.blogspot.sg/2013/05/the-best-buttercream-frosting-ever.html" target="_blank">here</a> + melted Hersey's milk chocolate). </div>

Before placing the 4th and hemispherical cake layer, we added a support system (3 dowels) to make sure the cake would not collapse. </div>

1. Roll out grey fondant in the shape of a rough circle about 8cm wide. </div>

2. Roll a ball of black fondant for the pupil and place it on the grey fondant. </div>

3. Create eye lids for the dinosaur's eye by rolling thin grey sausage rolls and placing one above and one below the black pupil. Use your fingers or a balling tool to blend out the ridges created by the eyelids to achieve a seamless finish. Add a small ball of red fondant to the inner corner of the eye.</div>

4. Create texture on the skin by using the openings of piping tips. We used a wilton #2 and #4 for our dinosaur.</div>

We wanted to keep the look of the dessert table classy and kept the colour palate primarily brown, white, red and green. The table elements included purple cupcakes as it's Alex's favourite colour and it helped create a very personal quirky touch! </div>

In total, we used 3 wooden crates to create height and filled the empty spaces with the goodie bags that were done by the birthday girl's mom. She also prepared chilled fresh fruit skewers (strawberries, purple and green grapes) and they were the perfect healthy treats for both kids and adults.</div>

We wanted to bake a special birthday cake for Alex and we found an incredible <a href="http://frostmeamemory.com/index.php/blog/34-blog-jurassicworldcake" target="_blank">dinosaur egg cake</a> we really liked. Using this cake as a reference, we sculpted a giant dino egg measuring 10"(H) x 7"(W). </div>

For the main activity, we organised a Dino Egg hunt for the children and the kids had so much fun! The plastic egg shells were from Cold Storage and we hid a couple of sweets and mini dinosaurs that were from Daiso in there as a bonus (kids who got the dinosaurs got an extra large smarties). </div>

Not only gorgeous, this bespoke carousel themed cake was 2 tiers of pure deliciousness! <i>The top tier was a 6" vanilla cake and the bottom 8" tier was our signature chocolate cake. </i></div>

4. Green and Brown Food colouring (We used Americolour Gel Paste) </div>

1. Lay your cupcakes out on the board (15" x 19" fits 38 cupcakes with a 1.5" diameter) and "glue" them onto the board using buttercream. </div>

2. Pipe the leaves first with the 1B wilton tip, alternating between the difference shades of green. Cover any gaps in-between cupcakes as best as possible. Any remaining gaps will be covered with the fondant leaves. </div>

3. For the bark, pipe on straight lines and swirls using the 1M tip. </div>

1. Cut out the monkey's face from dark brown fondant, using the largest 1.5" cookie cutter. Put it aside to dry. If where you live is humid, leaving it in an air con room will help speed up the process. </div>

2. Next, using the 1" circle cutter, cut a circle our from the lighter brown fondant. Place this circle on the lower part of the dark brown fondant with about 2 cm of the edge sticking out. With the large 1.5" circle cutter, cut off the excess so that the bottom edge of the light brown and dark brown fondant line up. </div>

3. To make the ears, use the 0.5" circle cutter ( The large opening of a piping works fine too) and cut out two small circles. Place a small ball of light brown fondant on top of each circles and flatten it. Pinch one end of the ears to fold it and attach it to the monkey's face using water. </div>

4. For the nose, roll the dark brown fondant into an oval and attach it to the face with water. After the face and ears have hardened, use an edible marker to draw on the eyes and mouth.</div>

When sieving, use a spoon and do not hit the sides of the bowl which may cause the meringue to deflate. If you prefer, you can sieve the mixture in step 1 and set aside before folding in instead but I find it faster to do it this way. </span></div>

<span style="font-family: inherit;">6. Prepare the baking trays with silicon mats and fill your piping bag with the meringue mixture. Pipe the whale shape by starting with a circle and add the tail. For the underside of the whale, pipe round circles to match the body. </span></div>

Before baking, let the macarons rest for 20 minutes to 30 minutes until the top of the macrons do not feel sticky (this may sometimes take up to 60 mins if it's humid). To speed up this process, place the macarons in front of a fan on medium speed. </span></div>

Most professional dessert tables have different height elements on them. Instead of spending money on glass jars or cake stands you will likely never use again, try using boxes that you can later use for storage (<a href="http://www.ikea.com/sg/en/catalog/products/50292360/">IKEA</a> has some great ones for only $9.90!) or photo frames to create the different height elements (See our <a href="http://twinniefoods.blogspot.sg/2015/08/3d-olaf-cake-frozen-dessert-table.html">Frozen Dessert Table</a>).</div>
